Top chef comes back to his roots at Apollo Hotel, Basingstoke

Apollo Hotel welcomes a new Head Chef to their kitchen this autumn. Aldermaston-born Craig Woodley joins the team at the popular Basingstoke hotel, continuing an illustrious career in the catering world.

Craig Woodley began life as a chef just down the road from Apollo Hotel, studying catering and hospitality at BCOT for 3 years. Since then, he has worked at the Michelin-starred Auberge Du Lac in Hatfield, under Jean Christophe Novelli. He’s also held top positions at several other well-known hotels in the region such as Norton Park in Sutton Scotney, Warbrook House in Hook, Regency Park Hotel in Thatcham, Macdonald Hotel in Windsor, and with the De Vere chain, where he was part of a chef academy.

Craig’s passion for supporting young chefs echoes our own as he also assists local colleges and communities; helping young adults to begin their chef’s journey.”

A local provenance is matched by an honest, down to earth philosophy about food. Having grown up at Wasing Park near Aldermaston, Craig’s early life fishing, shooting, growing his own vegetables and helping on the farm has shaped his approach in the kitchen today. As he explains:

“The country roots and traditions passed down from my parents will never be far from how I cook today and I’m keen to encourage my team to prepare local items from scratch with less waste. In a landscape of mass-produced fare, I’m bringing a more authentic approach to Apollo Hotel – creating dishes that will draw visitors from around my home town and beyond.”

Apollo Hotel’s new chef will be introducing Lunch for Less; where for only £10 a head, you and your colleagues, business contacts, friends and family can enjoy fantastic value meal in the Brasserie. Perfect for business meetings, ladies who lunch, or just a get together with friends.

Apollo also has an a la carte restaurant, Vespers. Both restaurants are open to diners as well as hotel guests, seven days a week.
